Ingredients

  • 2 cups edamame (in pods, frozen or fresh)
  • 3 tablespoons sweet chili sauce
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon lime juice
  • 1 tablespoon sesame seeds (optional)
  • to taste salt
  • for garnish chopped green onions (optional)

Instructions

  1. If using frozen edamame, cook them according to package instructions until tender. Drain and set aside. If using fresh edamame, bring a pot of salted water to boil, add edamame, and cook for about 5 minutes until bright green and tender, then drain.
  2. In a large skillet, heat the sesame oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  3. Add the cooked edamame to the skillet, and stir well to coat the pods with the garlic oil mixture.
  4. Pour in the sweet chili sauce, soy sauce, and lime juice. Toss everything together and cook for another 2-3 minutes until heated through and the flavors meld.
  5. Remove from heat, season with salt to taste, and sprinkle sesame seeds on top for added crunch.
  6. Garnish with chopped green onions if desired before serving.

Optional sesame seeds and green onions can enhance the flavor and presentation.
