Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup salsa
  • 6 small flour tortillas, cut into strips
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 bunch fresh cilantro, chopped for garnish
  • 1 to taste jalapeño slices (optional, for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef (or turkey) over medium heat until browned. Drain excess fat if necessary.
  3. Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
  4. Stir in the taco seasoning and cook according to packet instructions (usually adding water and bringing to a simmer).
  5. In a large mixing bowl, combine the seasoned meat mixture with the black beans, corn, diced tomatoes, and salsa. Mix well.
  6. In a greased 9x13-inch baking dish, layer half of the tortilla strips on the bottom.
  7. Pour half of the meat and beans mixture over the tortilla layer.
  8. Sprinkle one cup of shredded cheddar cheese on top of the meat mixture.
  9. Repeat with another layer of tortilla strips, the remaining meat mixture, and top with the rest of the cheese.
  10. Cover the baking dish with aluminum foil and bake for 20 minutes.
  11. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and lightly golden.
  12. Let the casserole cool for about 5-10 minutes before serving.
  13. Serve individual portions with a dollop of sour cream and garnish with chopped cilantro and jalapeño slices if desired.
