Taco Casserole Flavorful and Easy Family Meal
Ingredients
- 1 pound ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup salsa
- 6 small flour tortillas, cut into strips
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 bunch fresh cilantro, chopped for garnish
- 1 to taste jalapeño slices (optional, for serving)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef (or turkey) over medium heat until browned. Drain excess fat if necessary.
- Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3-4 minutes.
- Stir in the taco seasoning and cook according to packet instructions (usually adding water and bringing to a simmer).
- In a large mixing bowl, combine the seasoned meat mixture with the black beans, corn, diced tomatoes, and salsa. Mix well.
- In a greased 9x13-inch baking dish, layer half of the tortilla strips on the bottom.
- Pour half of the meat and beans mixture over the tortilla layer.
- Sprinkle one cup of shredded cheddar cheese on top of the meat mixture.
- Repeat with another layer of tortilla strips, the remaining meat mixture, and top with the rest of the cheese.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and lightly golden.
- Let the casserole cool for about 5-10 minutes before serving.
- Serve individual portions with a dollop of sour cream and garnish with chopped cilantro and jalapeño slices if desired.
