Ingredients

  • 1 lb ground beef (or plant-based alternative)
  • 1 tablespoon olive oil
  • 1 onion finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon paprika
  • to taste salt and pepper
  • 8 small corn or flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 0.5 cup grated cheddar cheese
  • 0.5 cup sour cream
  • 1 avocado sliced
  • 0.25 cup fresh cilantro, chopped
  • 1 lime cut into wedges

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional 1 minute until fragrant.
  3. Add ground beef (or plant-based alternative) to the skillet, breaking it apart with a spatula. Cook until browned, approximately 7-10 minutes.
  4. Stir in chili powder, cumin, paprika, salt, and pepper; mix well until the spices are evenly distributed. Allow cooking for another 2-3 minutes to enhance the flavors.
  5. Warm the tortillas by either placing them in a dry skillet for about 30 seconds on each side or wrapping them in a damp paper towel and microwaving for 15-20 seconds.
  6. Assemble the tacos by placing a generous spoonful of the beef mixture in the center of each tortilla.
  7. Top with shredded lettuce, diced tomatoes, a sprinkle of cheddar cheese, a dollop of sour cream, avocado slices, and fresh cilantro.
  8. Serve with lime wedges on the side for an added burst of freshness.
