Ingredients

  • 1 lb ground turkey or beef
  • 1 tablespoon taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 2 cup ranch dressing
  • 1 cup diced tomatoes
  • 1 2 cup sliced black olives
  • 1 4 cup chopped green onions
  • 1 package small flour tortillas or mini taco shells
  • 1 whole avocado, diced for topping
  • 1 bunch fresh cilantro, for garnish
  • to taste salt and pepper

Instructions

  1. In a skillet over medium heat, cook the ground turkey or beef until browned, about 5-7 minutes. Drain any excess fat.
  2. Stir in taco seasoning and a splash of water (about 1/4 cup). Cook for another 2-3 minutes until the meat is well coated and flavors have combined. Season with salt and pepper to taste.
  3. In a bowl, mix the ranch dressing with shredded cheddar cheese until well combined.
  4. To assemble the bites, lay out the mini tortillas or taco shells on a serving platter.
  5. Spoon a generous amount of the taco meat onto each tortilla.
  6. Top each bite with a drizzle of the ranch cheese mixture, followed by diced tomatoes, sliced olives, and chopped green onions.
  7. Finish with a sprinkle of diced avocado and garnish with fresh cilantro.
