Ingredients

  • 2 cups frozen tater tots
  • 4 large eggs
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup diced cooked ham or bacon (optional)
  • 1 small bell pepper, diced
  • 0.25 cup green onions, sliced
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 0.25 teaspoon smoked paprika (optional)
  • for serving hot sauce (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Spread the frozen tater tots evenly on a baking sheet and bake for about 20-25 minutes, or until they are golden brown and crispy, flipping halfway through.
  2. While the tater tots are baking, heat olive oil in a skillet over medium heat. Add the diced bell pepper and sauté for about 3-4 minutes until softened.
  3. If using, add the diced ham or bacon to the skillet and cook until just heated through, around 2 minutes. Remove the veggies and meat from the skillet and set aside.
  4. In the same skillet, crack the eggs and season with salt, pepper, and smoked paprika. Cook sunny-side up or scrambled to your preference.
  5. Once the tater tots are done, remove them from the oven. In a large bowl or individual serving bowls, layer the crispy tater tots, sautéed bell peppers and ham/bacon, followed by the cooked eggs.
  6. Sprinkle shredded cheddar cheese over the top and return the bowls to the oven for an additional 2-3 minutes to melt the cheese.
  7. Finish the bowls by garnishing with sliced green onions and drizzling with hot sauce if desired.

💡 Chef's Notes

Serve in large shallow bowls with a small dish of hot sauce on the side for an extra kick. You can also garnish with a sprinkle of paprika or additional green onions for a pop of color.
