Ingredients
- 4 cups frozen tater tots
- 1 pound breakfast sausage (bulk or casings removed)
- 1 quarter cup all-purpose flour
- 2 cups milk (whole or 2%)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder

- 4 large eggs
- 1 cup shredded cheese (cheddar or a blend)

Instructions
- Preheat your oven to 425°F (220°C). On a baking sheet, spread the frozen tater tots in a single layer. Bake for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
- While the tater tots are baking, heat a large skillet over medium heat. Add the breakfast sausage and cook, breaking it apart with a spatula, until browned and cooked through.
- Once the sausage is cooked, sprinkle the flour over the sausage in the skillet and stir to combine. Cook for an additional 1-2 minutes to eliminate the raw flour taste.
- Gradually whisk in the milk, garlic powder, onion powder, salt, and pepper. Bring the mixture to a simmer and cook, stirring frequently, until the gravy thickens (about 5-8 minutes). Remove from heat and set aside.
- In a separate skillet, cook the eggs to your liking: scrambled, fried, or poached. For added flavor, season the eggs with a pinch of salt and pepper.
- Once the tater tots are crispy, remove them from the oven. In large bowls, layer the tater tots as the base.
- Spoon the sausage gravy generously over the tater tots, followed by the cooked eggs. Top with shredded cheese and allow it to melt from the heat.
- Garnish with sliced green onions and serve hot with optional hot sauce on the side, if desired.
