Ingredients

  • 4 cups frozen tater tots
  • 1 pound breakfast sausage (bulk or casings removed)
  • 1 quarter cup all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

  • 4 large eggs
  • 1 cup shredded cheese (cheddar or a blend)
  • 2 green onions, sliced (for garnish)
  • optional hot sauce (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C). On a baking sheet, spread the frozen tater tots in a single layer. Bake for 25-30 minutes, or until golden brown and crispy, flipping halfway through.
  2. While the tater tots are baking, heat a large skillet over medium heat. Add the breakfast sausage and cook, breaking it apart with a spatula, until browned and cooked through.
  3. Once the sausage is cooked, sprinkle the flour over the sausage in the skillet and stir to combine. Cook for an additional 1-2 minutes to eliminate the raw flour taste.
  4. Gradually whisk in the milk, garlic powder, onion powder, salt, and pepper. Bring the mixture to a simmer and cook, stirring frequently, until the gravy thickens (about 5-8 minutes). Remove from heat and set aside.
  5. In a separate skillet, cook the eggs to your liking: scrambled, fried, or poached. For added flavor, season the eggs with a pinch of salt and pepper.
  6. Once the tater tots are crispy, remove them from the oven. In large bowls, layer the tater tots as the base.
  7. Spoon the sausage gravy generously over the tater tots, followed by the cooked eggs. Top with shredded cheese and allow it to melt from the heat.
  8. Garnish with sliced green onions and serve hot with optional hot sauce on the side, if desired.
