Thai Mango Sticky Rice Delightful and Simple Recipe
Ingredients
- 1 cup glutinous rice
- 1.5 cups coconut milk
- 0.5 cup sugar
- 0.25 teaspoon salt
- 2 ripe mangoes, peeled and sliced
- 1 tablespoon sesame seeds (for garnish)
- 1 bunch fresh mint leaves (for garnish)
Instructions
- Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours, preferably overnight.
- Drain the soaked rice and place it in a steamer lined with cheesecloth or a clean kitchen towel. Steam the rice for about 30-40 minutes until it’s translucent and tender.
- While the rice is steaming, prepare the coconut sauce. In a saucepan, combine the coconut milk, sugar, and salt over medium heat. Stir until the sugar dissolves, then set aside about 1/4 cup of the sauce for drizzling later.
- Once the rice is cooked, transfer it to a bowl and pour the remaining coconut sauce over it. Mix well to coat the rice evenly and let it sit for 15-20 minutes to absorb the flavors.
- To serve, place a mound of the sticky rice on a plate, then arrange the sliced mangoes beside it. Drizzle the reserved coconut sauce over the top and sprinkle with sesame seeds.
- Garnish with fresh mint leaves for a pop of color and aroma.
💡 Chef's Notes
