Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup cold unsalted butter, cubed
  • 1 cup shredded sharp cheddar cheese
  • 0.75 cup whole milk
  • 1 cup lump crab meat, picked over for shells
  • 1 tablespoon fresh parsley, chopped (for filling)
  • 3 tablespoons unsalted butter, melted (for topping)
  • 1 teaspoon Old Bay seasoning (for topping)
  • 1 tablespoon fresh parsley, chopped (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese. Gradually pour in the milk, mixing just until the dough comes together. Do not overmix.
  5. In a separate bowl, gently mix together the lump crab meat, chopped parsley, and a pinch of salt and pepper. Set aside.
  6. On a lightly floured surface, flatten the dough into a rectangle about ¾ inch thick. Cut into squares or rounds using a biscuit cutter or knife.
  7. Take each biscuit and make a small indentation in the center. Fill with about 1 tablespoon of the crab mixture then fold the edges over to seal, forming a stuffed biscuit. Place seam side down on the baking sheet.
  8. Bake for 15-18 minutes, or until the biscuits are golden brown and baked through.
  9. While the biscuits are baking, combine the melted butter, Old Bay seasoning, and chopped parsley in a small bowl.
  10. As soon as the biscuits are out of the oven, brush them generously with the seasoned butter mixture. Serve warm.

💡 Chef's Notes

Serve warm with a side of creamy garlic dipping sauce, if desired.
