Ingredients

  • 1 French baguette sliced into 1/2 inch pieces
  • 2 medium-sized ripe tomatoes, diced
  • 1 medium zucchini, diced
  • 2 cloves garlic, minced
  • 0.25 cup fresh basil, chopped
  • 0.25 cup feta cheese, crumbled
  • 3 tablespoons balsamic glaze
  • 3 tablespoons olive oil
  • to taste salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, arrange the baguette slices in a single layer and drizzle with olive oil. Toast in the oven for about 8-10 minutes or until golden brown and crispy. Remove and set aside.
  3. In a medium bowl, combine the diced tomatoes, zucchini, minced garlic, and chopped basil. Mix well until combined.
  4. Season the mixture with salt and pepper to enhance the flavors.
  5. To assemble the bruschetta, spoon the tomato and zucchini mixture generously onto each toasted baguette slice.
  6. Sprinkle crumbled feta cheese over the top of each bruschetta.
  7. Drizzle balsamic glaze over the assembled bruschetta for a burst of flavor.
  8. Serve immediately to enjoy the crispness of the toast with the fresh toppings.
