Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, with juices
  • 1 cup corn (fresh or frozen)
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon paprika
  • to taste salt and pepper
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • for garnish fresh cilantro, chopped
  • for serving avocado slices
  • for serving lime wedges

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until translucent.
  2. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
  4. Mix in the diced bell pepper and cook for another 3-4 minutes until softened.
  5. Stir in the drained black beans, diced tomatoes (with juices), corn, chili powder, cumin, and paprika. Season with salt and pepper to taste.
  6. Reduce the heat to low and let the mixture simmer for 10 minutes, stirring occasionally.
  7. Sprinkle the shredded cheese on top of the skillet mixture, cover, and let it cook for an additional 2-3 minutes until the cheese is melted.
  8. Once melted, remove from heat and garnish with chopped cilantro.

💡 Chef's Notes

Serve directly in the skillet for a rustic presentation. Top with avocado slices and lime wedges for added freshness.
