Turkey Taco Skillet Flavorful and Quick Weeknight Meal
Ingredients
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes, with juices
- 1 cup corn (fresh or frozen)
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 0.5 teaspoon paprika

- 1 cup shredded cheese (cheddar or Mexican blend)

Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until translucent.
- Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
- Mix in the diced bell pepper and cook for another 3-4 minutes until softened.
- Stir in the drained black beans, diced tomatoes (with juices), corn, chili powder, cumin, and paprika. Season with salt and pepper to taste.
- Reduce the heat to low and let the mixture simmer for 10 minutes, stirring occasionally.
- Sprinkle the shredded cheese on top of the skillet mixture, cover, and let it cook for an additional 2-3 minutes until the cheese is melted.
- Once melted, remove from heat and garnish with chopped cilantro.
