Ingredients

  • 1 cup rolled oats
  • 0.5 cup almond butter
  • 0.25 cup honey or maple syrup
  • 0.5 cup almond meal or ground almonds
  • 0.25 cup shredded coconut unsweetened
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon
  • 1 pinch salt
  • 0.25 cup dark chocolate chips optional

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond meal, shredded coconut, and cinnamon. Mix well.
  2. In a separate bowl, whisk together the almond butter, honey or maple syrup, vanilla extract, and salt until smooth and creamy.
  3. Pour the almond butter mixture into the dry ingredients and mix until everything is well incorporated. If desired, fold in the dark chocolate chips for an extra treat.
  4. Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is used up, making about 12-15 energy balls.
  5. Place the energy balls on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.
