Vanilla Almond Butter Energy Balls Simple Recipe
Ingredients
- 1 cup rolled oats
- 0.5 cup almond butter
- 0.25 cup honey or maple syrup
- 0.5 cup almond meal or ground almonds
- 0.25 cup shredded coconut unsweetened
- 1 tsp vanilla extract
- 0.5 tsp cinnamon
- 1 pinch salt
- 0.25 cup dark chocolate chips optional
Instructions
- In a large mixing bowl, combine the rolled oats, almond meal, shredded coconut, and cinnamon. Mix well.
- In a separate bowl, whisk together the almond butter, honey or maple syrup, vanilla extract, and salt until smooth and creamy.
- Pour the almond butter mixture into the dry ingredients and mix until everything is well incorporated. If desired, fold in the dark chocolate chips for an extra treat.
- Using your hands, scoop out a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture is used up, making about 12-15 energy balls.
- Place the energy balls on a baking sheet or plate lined with parchment paper and refrigerate for at least 30 minutes to firm up.
