Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 half cup sugar
  • 1 tablespoon vanilla bean paste
  • 2.5 teaspoons unflavored gelatin
  • 3 tablespoons cold water
  • a pinch salt

Instructions

  1. In a small bowl, sprinkle the gelatin over the cold water. Let it sit for about 5 minutes to bloom (soften).
  2. In a saucepan over medium heat, combine the heavy cream, whole milk, sugar, vanilla bean paste, and a pinch of salt. Stir gently until the sugar is dissolved and the mixture is warm but not boiling.
  3. Remove the saucepan from the heat and add the bloomed gelatin. Stir until completely dissolved, ensuring there are no lumps.
  4. If using a vanilla bean, discard the pod and continue to stir. Pour the mixture through a fine mesh sieve into a large measuring cup or bowl to remove any lumps or vanilla pod remnants.
  5. Pour the strained panna cotta mixture into individual serving glasses or molds. Allow them to cool at room temperature for about 30 minutes.
  6. Once cooled, cover the glasses with plastic wrap and place them in the refrigerator. Let them chill for at least 4 hours, or until set completely.
  7. To serve, you can top the panna cotta with fresh berries, a drizzle of honey, or a sprinkle of edible flowers for a pop of color.
