Ingredients

  • 2 cans young green jackfruit in water or brine, drained and rinsed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 2 cayenne pepper (optional)
  • 1 cup BBQ sauce (store-bought or homemade)
  • to taste Salt and pepper
  • 4 whole grain or gluten-free burger buns
  • optional Coleslaw (for topping)

Instructions

  1. Begin by shredding the jackfruit. Use your hands or two forks to break the jackfruit into pieces, resembling pulled pork. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic to the skillet and sauté for another minute until fragrant.
  4. Stir in the shredded jackfruit, smoked paprika, cumin, garlic powder, cayenne pepper, salt, and pepper. Mix well to coat the jackfruit with the spices.
  5. Pour in the BBQ sauce, stirring to combine all ingredients thoroughly.
  6. Reduce the heat to low, cover the skillet, and let the jackfruit mixture simmer for 20-25 minutes, stirring occasionally to prevent sticking. The jackfruit should be tender and flavorful.
  7. While the jackfruit is simmering, prepare the burger buns by lightly toasting them in a toaster or on a dry skillet.
  8. Once the jackfruit is ready, assemble the sandwiches by placing a generous portion of BBQ jackfruit on the bottom half of each bun. Top with coleslaw if desired, then place the top half of the bun on.
  9. Serve immediately while warm and enjoy!
