Vegan Jackfruit BBQ Sandwiches Easy and Flavorful Meal
Ingredients
- 2 cans young green jackfruit in water or brine, drained and rinsed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 2 cayenne pepper (optional)
- 1 cup BBQ sauce (store-bought or homemade)
- to taste Salt and pepper
- 4 whole grain or gluten-free burger buns
- optional Coleslaw (for topping)
Instructions
- Begin by shredding the jackfruit. Use your hands or two forks to break the jackfruit into pieces, resembling pulled pork. Set aside.
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic to the skillet and sauté for another minute until fragrant.
- Stir in the shredded jackfruit, smoked paprika, cumin, garlic powder, cayenne pepper, salt, and pepper. Mix well to coat the jackfruit with the spices.
- Pour in the BBQ sauce, stirring to combine all ingredients thoroughly.
- Reduce the heat to low, cover the skillet, and let the jackfruit mixture simmer for 20-25 minutes, stirring occasionally to prevent sticking. The jackfruit should be tender and flavorful.
- While the jackfruit is simmering, prepare the burger buns by lightly toasting them in a toaster or on a dry skillet.
- Once the jackfruit is ready, assemble the sandwiches by placing a generous portion of BBQ jackfruit on the bottom half of each bun. Top with coleslaw if desired, then place the top half of the bun on.
- Serve immediately while warm and enjoy!
