Ingredients

  • 2 cups all-purpose flour
  • 3.75 cups boiling water
  • 1 cup finely chopped cabbage
  • 1 cup grated carrots
  • 0.5 cup mushrooms, finely chopped
  • 0.25 cup green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, minced
  • 1 clove garlic, minced
  • to taste salt and pepper

Instructions

  1. In a mixing bowl, combine the flour with boiling water gradually, stirring with a fork until the mixture comes together.
  2. Knead the dough on a lightly floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
  3. While the dough is resting, prepare the filling. In a large bowl, combine chopped cabbage, grated carrots, mushrooms, green onions, soy sauce, sesame oil, ginger, garlic, salt, and pepper. Mix thoroughly to combine all the flavors.
  4. After resting, divide the dough into small balls (about the size of a golf ball) and roll each ball into a thin circular wrapper, about 3 to 4 inches in diameter.
  5. Place a tablespoon of filling in the center of each wrapper. Fold the wrapper over the filling and pinch the edges to seal, creating a pleated effect. Ensure there are no gaps.
  6. Prepare a steamer by lining it with parchment paper or using a steaming basket. Place the dumplings in the steamer, ensuring they do not touch each other.
  7. Steam the dumplings over boiling water for about 15-20 minutes or until they are translucent and cooked through.
  8. Once cooked, remove from the steamer and serve hot with additional soy sauce or a dipping sauce of your choice.
