Ingredients

  • 200 g feta cheese
  • 2 cups cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1 4 cup olive oil
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • 12 ounces pasta (penne or fusilli)
  • 1 2 cup fresh basil, chopped
  • 1 zest of 1 lemon
  • 1 2 juice of 1/2 lemon
  • optional red pepper flakes for heat

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, place the block of feta cheese in the center and surround it with the halved cherry tomatoes.
  3. Add the minced garlic, olive oil, dried oregano, salt, and pepper over the feta and tomatoes. Toss gently to coat the tomatoes.
  4. Bake in the preheated oven for 25-30 minutes, or until the feta is soft and tomatoes are blistered.
  5. While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and reserve 1/2 cup of the pasta water.
  6. Once the feta and tomatoes are done, remove the dish from the oven and stir everything together to create a creamy sauce.
  7. Add the cooked pasta to the baking dish and mix well. If the sauce is too thick, add a little reserved pasta water until you reach the desired consistency.
  8. Stir in the chopped basil, lemon zest, and juice, mixing until well combined. Adjust seasoning with additional salt, pepper, and red pepper flakes if desired.
