Ingredients

  • 2 large russet potatoes
  • 3 tablespoons vegetable oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon cayenne pepper
  • 0.5 teaspoon onion powder
  • to taste salt
  • 1 cup shredded pepper jack cheese
  • 0.25 cup green onions, chopped
  • 0.25 cup sour cream
  • 2 tablespoons freshly chopped cilantro
  • 1 teaspoon lime juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the russet potatoes, then cut them into thin fries, about 1/4 inch thick.
  3. In a large bowl, toss the cut fries with vegetable oil, ensuring they are evenly coated.
  4. In a small bowl, mix together the smoked paprika, garlic powder, cayenne pepper, onion powder, and a pinch of salt. Sprinkle this spice mixture over the fries, and toss again to coat.
  5. Spread the seasoned fries evenly on a baking sheet lined with parchment paper. Bake in the preheated oven for 30 minutes, flipping halfway through, until they are golden and crispy.
  6. Remove the fries from the oven. Sprinkle the shredded pepper jack cheese over the hot fries. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  7. While the cheese is melting, prepare the zesty sauce by mixing the sour cream, chopped cilantro, and lime juice in a small bowl. Season with a touch of salt, if desired.
  8. Once the cheese is melted, remove the fries from the oven and garnish with chopped green onions.
  9. Serve the Voodoo Fries hot, drizzled with the zesty sauce for dipping.
