Ingredients
- 2 medium zucchinis, cut into thin strips

Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well to combine.
- Set up a breading station: In one bowl, have the beaten eggs ready. In another bowl, place the breadcrumb mixture.
- Dip each zucchini strip into the beaten eggs, allowing any excess to drip off. Then, coat the zucchini in the breadcrumb mixture, pressing lightly to ensure an even coating.
- Place the coated zucchini fries in a single layer on the prepared baking sheet, ensuring they aren’t overcrowded for proper baking.
- Lightly spray the tops with olive oil to enhance crispiness.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
