Ingredients

  • 2 medium zucchinis, cut into thin strips
  • 1 cup breadcrumbs (panko or regular)
  • 0.5 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon paprika
  • 2 large eggs, beaten

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well to combine.
  3. Set up a breading station: In one bowl, have the beaten eggs ready. In another bowl, place the breadcrumb mixture.
  4. Dip each zucchini strip into the beaten eggs, allowing any excess to drip off. Then, coat the zucchini in the breadcrumb mixture, pressing lightly to ensure an even coating.
  5. Place the coated zucchini fries in a single layer on the prepared baking sheet, ensuring they aren’t overcrowded for proper baking.
  6. Lightly spray the tops with olive oil to enhance crispiness.
  7. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
  8. Remove from the oven and let cool for a few minutes before serving.

💡 Chef's Notes

Serve in a cone-shaped holder or small basket lined with parchment paper. Pair with marinara or garlic aioli for dipping.
