Ingredients

  • 1 loaf crusty French bread
  • 2 large yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon thyme (fresh or dried)
  • to taste salt and pepper
  • 1 cup shredded Gruyère cheese (or any preferred melting cheese)
  • for garnish fresh parsley, chopped

Instructions

  1. In a large pan, melt 2 tablespoons of butter and 2 tablespoons of olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are golden brown and caramelized, about 20-25 minutes. If necessary, reduce heat to prevent burning.
  2. Once the onions are caramelized, add the minced garlic and thyme. Stir for another 2-3 minutes until the garlic is fragrant. Season with salt and pepper to taste. Remove from heat and set aside to cool.
  3. Preheat your oven to 400°F (200°C). Cut the French bread in half lengthwise and place both halves on a baking sheet, cut side up.
  4. In a small bowl, mix the remaining 2 tablespoons of melted butter with a pinch of salt. Brush this mixture generously over both halves of the bread.
  5. Spread the caramelized onion and garlic mixture evenly over the cut sides of the bread. Sprinkle the shredded Gruyère cheese generously on top.
  6. Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the cheese is melted and bubbly with a light golden color.
  7. Once baked, remove from the oven and let cool slightly. Sprinkle with fresh parsley for a pop of color and serve warm.

💡 Chef's Notes
