Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 1 medium red bell pepper, cut into 1-inch pieces
- 1 medium yellow bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into wedges
- 1 small zucchini, sliced into thick rounds
- 1 teaspoon garlic powder
- 1 teaspoon lemon zest

Instructions
- In a large bowl, combine the olive oil, Cajun seasoning, garlic powder, lemon zest, salt, and pepper. Whisk until the mixture is well blended.
- Add the shrimp to the bowl, ensuring they are evenly coated with the seasoning mixture. Let marinate for 15-20 minutes for optimal flavor.
- While the shrimp is marinating, soak wooden skewers in water for about 10 minutes to prevent burning.
- Preheat the grill or a grill pan over medium-high heat.
- After marinating, thread the shrimp onto the soaked skewers, alternating with pieces of bell pepper, onion, and zucchini.
- Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Ensure the vegetables are slightly charred but still crisp.
- Remove from the grill and let cool slightly.
