Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 1 medium red bell pepper, cut into 1-inch pieces
  • 1 medium yellow bell pepper, cut into 1-inch pieces
  • 1 small red onion, cut into wedges
  • 1 small zucchini, sliced into thick rounds
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon zest
  • to taste salt and pepper
  • as needed fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the olive oil, Cajun seasoning, garlic powder, lemon zest, salt, and pepper. Whisk until the mixture is well blended.
  2. Add the shrimp to the bowl, ensuring they are evenly coated with the seasoning mixture. Let marinate for 15-20 minutes for optimal flavor.
  3. While the shrimp is marinating, soak wooden skewers in water for about 10 minutes to prevent burning.
  4. Preheat the grill or a grill pan over medium-high heat.
  5. After marinating, thread the shrimp onto the soaked skewers, alternating with pieces of bell pepper, onion, and zucchini.
  6. Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque. Ensure the vegetables are slightly charred but still crisp.
  7. Remove from the grill and let cool slightly.
  8. Serve the skewers on a platter, garnished with fresh chopped parsley for an added burst of color and flavor.
