Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 whole cucumber, diced
  • 1 whole red bell pepper, diced
  • 0.25 cup red onion, finely chopped
  • 0.25 cup fresh dill, chopped
  • 0.25 cup feta cheese, crumbled (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 whole zest of lemon
  • to taste salt and pepper

Instructions

  1. In a medium saucepan, combine the rinsed quinoa and water (or vegetable broth). Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa is fluffy and the liquid is absorbed.
  3. Remove from heat and let the quinoa cool for about 10 minutes. Then, fluff it with a fork.
  4. In a large mixing bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, and fresh dill.
  5. In a separate small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and pepper.
  6. Pour the dressing over the quinoa mixture and toss everything until well combined.
  7. If desired, sprinkle crumbled feta cheese on top before serving.

💡 Chef's Notes

Serve the salad in a large bowl and garnish with a few extra sprigs of dill and a lemon wedge on the side for a fresh look.
