Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 2 lemons zest and juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon red pepper flakes (optional)
  • to taste salt and pepper
  • Bamboo or metal skewers

Instructions

  1. If using bamboo skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  2. In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, parsley, cilantro, smoked paprika, red pepper flakes, salt, and pepper to make the marinade.
  3. Add the shrimp to the marinade and gently toss to coat. Cover and let marinate in the refrigerator for 30 minutes to 1 hour for maximum flavor.
  4. Preheat your grill to medium-high heat. If using a grill pan, heat it on the stovetop over medium heat.
  5. Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp for even grilling.
  6. Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp turn pink and opaque. Avoid overcooking.
  7. Remove the skewers from the grill and let them rest for a couple of minutes before serving.

💡 Chef's Notes

Soak bamboo skewers in water for at least 30 minutes before grilling.
