Ingredients

  • 1 pound baby carrots (or regular carrots, peeled and cut into sticks)
  • 3 tablespoons maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg (optional)
  • to taste salt and pepper
  • for garnish fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the maple syrup, olive oil, cinnamon, nutmeg, salt, and pepper. Whisk until well blended.
  3. Add the carrots to the bowl and toss thoroughly to ensure they are evenly coated with the maple glaze.
  4. Spread the coated carrots out on a baking sheet in a single layer to ensure even roasting.
  5. Roast in the preheated oven for 20-25 minutes, stirring halfway through, or until the carrots are tender and lightly caramelized.
  6. Once done, remove from the oven and let them cool for a couple of minutes.
  7. Sprinkle freshly chopped parsley over the top for a burst of color and added freshness, if desired.

💡 Chef's Notes

Fresh parsley can be added for garnish.
