Ingredients

  • 4 large russet potatoes
  • 1 lb ground beef or turkey
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • to taste salt and pepper
  • 1 cup shredded cheddar cheese
  • 1 4 fresh parsley, chopped (for garnish)
  • as needed butter (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the russet potatoes thoroughly and poke several holes in each potato with a fork. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender.
  3. In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  4. Add the ground beef or turkey to the skillet. Break it apart with a spatula and cook until browned and fully cooked. Drain any excess grease.
  5. Stir the tomato sauce, Worcestershire sauce, brown sugar, chili powder, salt, and pepper into the skillet with the meat mixture. Allow it to simmer for about 5-10 minutes, stirring occasionally, until heated through and flavors meld.
  6. Once the potatoes are done, remove them from the oven and let them cool slightly. Carefully cut a slit down the top of each potato and gently squeeze the sides to open them up.
  7. Fluff the insides of each potato with a fork and add a small pat of butter.
  8. Spoon the sloppy joe mixture generously inside each baked potato and top with shredded cheddar cheese.
  9. Return the stuffed potatoes to the oven for an additional 5-10 minutes or until the cheese is melted and bubbly.
  10. Remove from the oven and garnish with chopped parsley before serving.

💡 Chef's Notes

Serve the sloppy joe baked potatoes on individual plates with a sprinkle of extra parsley for color. A side of pickles or a simple green salad pairs nicely for a refreshing contrast.
