Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1 cup shredded sharp cheddar cheese

1 cup 7Up soda

Zest of 1 lemon

Zest of 1 lime

Instructions

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.

Add the cold cubed butter into the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

Stir in the shredded cheddar cheese, lemon zest, and lime zest until evenly distributed.

Pour the 7Up soda into the mixture. Gently fold until just combined; avoid overmixing to keep the biscuits tender.

On a floured surface, turn out the dough and pat it into a rectangle about 1-inch thick.

Cut out biscuits using a round cutter or a glass and place them on the prepared baking sheet, leaving space between each biscuit.

Bake in the preheated oven for 12-15 minutes, or until they are golden brown on top.

Remove from the oven and let cool slightly before serving.

Prep Time: 10 mins | Total Time: 25 mins | Servings: 12 biscuits

                      - Presentation Tips: Serve warm, perhaps with a pat of butter or a light drizzle of honey over the top for added sweetness.
