Ingredients

6 large jalapeño peppers

1 pound breakfast sausage (mild or spicy, according to preference)

1 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 cup shredded cheese (cheddar or Mexican blend)

1 cup breadcrumbs (for coating)

1 tablespoon olive oil

Salt and pepper to taste

Instructions

Prepare the Peppers: Start by preheating your air fryer to 375°F (190°C). Slice the jalapeños in half lengthwise and carefully remove the seeds and inner membranes using a small spoon or knife. Set aside.

Make the Filling: In a mixing bowl, combine the softened cream cheese, garlic powder, onion powder, smoked paprika, and shredded cheese. Mix until well combined. Season with salt and pepper to taste.

Stuff the Peppers: Take a portion of the breakfast sausage and flatten it in your hand. Place half a jalapeño on the sausage patty, cut side up, and spoon a generous amount of the cream cheese mixture on top. Wrap the sausage around the jalapeño, fully enclosing it. Repeat this for all the jalapeño halves.

Coat the Eggs: Place the breadcrumbs in a shallow dish. Lightly coat each sausage-wrapped jalapeño with olive oil (this helps the breadcrumbs adhere) and then roll in the breadcrumbs until well covered.

Air Fry the Eggs: Arrange the stuffed and coated jalapeños in a single layer in the air fryer basket. Cook for 12-15 minutes, or until the sausage is cooked through and the breadcrumbs are golden brown. (You may need to do this in batches depending on the size of your air fryer.)

Serve and Enjoy: Once cooked, remove the armadillo eggs from the air fryer and let them cool for a couple of minutes before serving.
