6 small flour tortillas

4 large eggs

1/2 cup cooked and crumbled breakfast sausage (or turkey sausage)

1/2 cup shredded cheddar cheese

1/4 cup diced bell peppers (red, green, or a mix)

1/4 cup diced red onion

1/2 teaspoon paprika

1/4 teaspoon black pepper

Olive oil spray

Salsa or hot sauce (for serving)

Instructions
 

In a medium bowl, beat the eggs with paprika and black pepper.

    Heat a skillet over medium heat and scramble the eggs until just set. Remove from heat.

      In a large mixing bowl, combine scrambled eggs, crumbled sausage, shredded cheese, diced bell peppers, and diced onion. Mix until well combined.

        Warm the flour tortillas in the microwave for about 15-20 seconds to make them pliable.

          Place about 2-3 tablespoons of the filling in the center of each tortilla. Roll tightly, tucking in the sides as you go to form a taquito.

            Lightly spray the outside of each taquito with olive oil spray for a golden, crispy finish.

              Preheat the air fryer to 380°F (193°C).

                Place the taquitos in the air fryer basket in a single layer, ensuring they don’t touch.

                  Air fry for 8-10 minutes, shaking the basket halfway through, until they are golden brown and crispy.

                    Remove from the air fryer and serve with salsa or hot sauce for dipping.
