4 cups ripe cherry tomatoes, halved

1 onion, quartered

4 cloves garlic, peeled

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

2 cups vegetable broth

1 tablespoon balsamic vinegar

Fresh basil leaves for garnish

A dollop of crème fraîche or yogurt for serving (optional)

Instructions
 

Preheat the air fryer to 400°F (200°C).

    In a mixing bowl, combine the halved cherry tomatoes, quartered onion, and peeled garlic cloves.

      Drizzle with olive oil, and sprinkle dried basil, dried oregano, salt, and pepper over the top. Toss well to coat everything evenly.

        Arrange the seasoned mixture in the air fryer basket in a single layer.

          Roast in the air fryer for about 15-18 minutes, or until the tomatoes are blistered and slightly charred.

            Once done, carefully remove the roasted vegetables from the air fryer and place them into a blender.

              Pour in the vegetable broth and balsamic vinegar. Blend on high until smooth and creamy.

                Taste and adjust seasoning if necessary, adding more salt, pepper, or another splash of balsamic vinegar as desired.

                  If the soup is too thick, add a little more vegetable broth to reach your desired consistency.

                    Heat the blended soup in a pot over medium heat until warmed through or enjoy it cold for a refreshing twist.
