Instructions
In a large mixing bowl, combine rolled oats, almond butter, shredded coconut, honey (or maple syrup), and vanilla extract.
Add in the chopped almonds and dark chocolate chips, mixing until everything is combined evenly.
Sprinkle the salt over the mixture and stir again until well mixed.
Using your hands or a spoon, scoop out small portions of the mixture and roll them into bite-sized balls (about 1 inch in diameter).
Place the energy bites onto a parchment-lined baking sheet or plate.
Refrigerate for at least 30 minutes to firm them up.
Once set, transfer the energy bites to an airtight container and store them in the refrigerator for up to two weeks.
