8 small flour tortillas

2 tablespoons unsalted butter, melted

2 tablespoons sugar

1 teaspoon cinnamon

For the Apple Filling:

2 large apples, peeled, cored, and diced (preferably Granny Smith)

1 tablespoon lemon juice

2 tablespoons brown sugar

1/2 teaspoon cinnamon

1 tablespoon butter

For the Cheesecake Filling:

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup heavy whipping cream

For Garnish:

Caramel sauce

Crushed graham crackers

Chopped pecans or walnuts (optional)

Prepare Taco Shells: Preheat your oven to 375°F (190°C). Combine the melted butter, sugar, and cinnamon in a small bowl. Brush one side of each tortilla with the mixture. Place the tortillas on an oven-safe rack (arched in taco shape) or between two oven-safe surfaces, and bake for about 8-10 minutes until they are slightly crispy and golden. Allow them to cool in this shape.

    Cook Apple Filling: In a medium skillet, melt 1 tablespoon of butter over medium heat. Add the diced apples, lemon juice, brown sugar, and cinnamon. Cook for about 5-7 minutes, stirring often until the apples are tender and caramelized. Remove from heat and let cool.

      Make Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
