1 ripe avocado

2 slices of whole grain bread

1 large egg

1 slice of cheddar cheese

2 slices of tomato

Handful of fresh spinach

Salt and pepper to taste

1 tablespoon olive oil

Optional: Red pepper flakes for a kick

Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop it into a bowl. Mash it with a fork until it's creamy, then season with salt and pepper to taste. Set aside.

    Toast the Bread: Place the slices of whole grain bread in a toaster or on a griddle over medium heat until golden and crispy.

      Cook the Egg: In a small skillet, heat the olive oil over medium heat. Crack the egg into the skillet and cook until the white is set but the yolk is still runny (about 2-3 minutes for sunny-side up). If you prefer a fully cooked yolk, flip and cook for another minute.

        Assemble the Sandwich: On one slice of toasted bread, spread a generous layer of the mashed avocado. Top with fresh spinach, the slice of cheddar cheese, tomato slices, and the cooked egg. Sprinkle with red pepper flakes if desired.

          Complete the Sandwich: Place the second slice of toast on top to create the sandwich. Gently press down.
