Ingredients

2 medium apples, peeled, cored, and diced

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/2 teaspoon salt

1/4 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1/4 cup unsweetened applesauce

1/2 cup powdered sugar (for glaze)

1 tablespoon milk (for glaze)

Instructions

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

In a separate large bowl, mix together the granulated sugar, brown sugar, milk, egg, vanilla extract, and applesauce until well combined.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.

Fold in the diced apples gently, making sure they are evenly distributed throughout the batter.

Using a cookie scoop or tablespoon, drop heaping spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.

Bake in the preheated oven for 15-18 minutes, or until the fritters are golden brown and cooked through.

While the fritters are baking, prepare the glaze by whisking together powdered sugar and 1 tablespoon of milk until smooth.

Once the fritters are done, remove them from the oven and allow them to cool for a few minutes on a wire rack.

Drizzle the glaze over the fritters while they are still warm for a delightful finish.
