To make baked salmon in foil with asparagus, you need fresh ingredients. The main items are two salmon fillets, about six ounces each. You'll also need one bunch of asparagus, trimmed to fit nicely in the foil. Olive oil adds richness, so two tablespoons of that is essential. Garlic, minced, adds a nice kick, so use two cloves. For flavor, get one lemon and slice it. You will also want one teaspoon each of dried thyme and smoked paprika. Lastly, season with salt and pepper to taste. Fresh parsley works well as a garnish.

Ingredients

2 salmon fillets (about 6 ounces each)

1 bunch of asparagus, trimmed

2 tablespoons olive oil

2 cloves garlic, minced

1 lemon, sliced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C).

Cut two large pieces of aluminum foil, about 12 inches long, and place them on a baking sheet.

In a bowl, mix together the olive oil, minced garlic, thyme, smoked paprika, salt, and pepper.

Place the salmon fillets in the center of one piece of foil, skin-side down.

Arrange the trimmed asparagus around the salmon.

Drizzle the olive oil mixture evenly over the salmon and asparagus.

Place lemon slices on top of the salmon and asparagus for added flavor.

Fold the foil over the salmon and asparagus to create a tightly sealed packet.

Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.

Carefully remove the baking sheet from the oven and let it sit for a couple of minutes before opening the foil packets (watch out for steam!).

Garnish with freshly chopped parsley before serving.

                        Prep Time: 10 mins | Total Time: 30 mins | Servings: 2

                          - Presentation Tips: Serve the salmon and asparagus directly from the foil on a plate for a rustic look, or carefully transfer to a platter. Drizzle any remaining juices from the foil over the top for extra flavor.
