1 pound rainbow carrots (or regular carrots), peeled and cut into even sticks

3 tablespoons balsamic vinegar

2 tablespoons olive oil

2 tablespoons honey or maple syrup

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Optional: Crumbled feta cheese and chopped parsley for garnish

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    In a mixing bowl, combine the balsamic vinegar, olive oil, honey (or maple syrup), thyme, salt, and pepper. Whisk until well blended.

      Add the carrot sticks to the bowl and toss them in the balsamic mixture until they are all evenly coated.

        Spread the carrots in a single layer on the prepared baking sheet, ensuring they are not overcrowded for even roasting.
