1 ½ cups graham cracker crumbs

1/3 cup sugar

1/2 cup unsalted butter, melted

3 (8 oz) packages cream cheese, softened

1 cup sugar

3 large eggs

1 teaspoon vanilla extract

2 ripe bananas, mashed

1 tablespoon lemon juice

1 cup heavy cream

1/4 cup powdered sugar

Sliced bananas and chocolate shavings for garnish

Prepare the Crust: Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, 1/3 cup of sugar, and melted butter. Stir until the mixture resembles wet sand. Press this mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool completely.

    Make the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add 1 cup of sugar, continuing to mix until well combined.

      Add the Eggs: Beat in the eggs one at a time, mixing just until incorporated after each addition. Be careful not to overmix. Stir in the vanilla extract, mashed bananas, and lemon juice until the mixture is smooth and creamy.

        Bake the Cheesecake: Pour the filling over the cooled crust. Bake in the preheated oven for 50-60 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
