Ingredients

1 cup all-purpose flour

1/4 cup cornstarch

1/4 teaspoon salt

1/2 teaspoon baking powder

1/4 cup sugar

1/2 cup unsalted butter, softened

1 large egg

1 teaspoon vanilla extract

2 ripe bananas, sliced

1 cup banana pudding (store-bought or homemade)

1/2 cup whipped cream

1/4 cup crushed vanilla wafers

Optional: chocolate shavings or sprinkles for garnish

Instructions

Prepare the Taco Shells: In a medium bowl, whisk together flour, cornstarch, salt, baking powder, and sugar. In a separate bowl, cream together the softened butter, egg, and vanilla extract until light and fluffy. Gradually mix the dry ingredients into the wet mixture until a dough forms.

Shape the Shells: Preheat your oven to 350°F (175°C). On a floured surface, roll the dough to about 1/8-inch thickness and cut into circles about 4 inches in diameter. Gently press each circle into a muffin tin, creating a taco shape, and bake for 10-12 minutes or until the edges are golden. Allow to cool completely.

Assemble the Tacos: In each cooled taco shell, layer a spoonful of banana pudding at the bottom, followed by a few slices of banana. Top generously with whipped cream.

Add Toppings: Sprinkle crushed vanilla wafers over the whipped cream for added texture and flavor. For an extra touch, add chocolate shavings or colorful sprinkles on top as a garnish.

Serve: Arrange the Banana Pudding Tacos on a serving platter and enjoy immediately for the best texture!
