2 chicken breasts, boneless and skinless

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust spice level to taste)

Salt and pepper to taste

Vegetable oil for frying

2 sandwich buns (preferably brioche)

1 cup shredded lettuce

1 ripe avocado, sliced

1/4 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon lime juice

Instructions
 

Marinate the Chicken: In a bowl, soak the chicken breasts in buttermilk for at least 1 hour, or preferably overnight in the refrigerator. This will tenderize the meat.

    Prepare the Breading: In a shallow dish, combine the flour, cornstarch, garlic powder, paprika, cayenne pepper, salt, and pepper. Mix well.

      Bread the Chicken: Remove the chicken from the buttermilk and allow excess to drip off. Dredge each piece of chicken in the flour mixture, making sure to coat evenly. Shake off any excess flour.

        Fry the Chicken: In a deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully place the breaded chicken into the hot oil.
