6 pork sausages (your choice of flavor)

1 pound (450g) Yukon Gold potatoes, peeled and chopped

1 cup whole milk

4 tablespoons unsalted butter

1 onion, thinly sliced

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

Gravy (store-bought or homemade) for serving

Instructions
 

Cook the Potatoes: Place the chopped Yukon Gold potatoes in a large pot of salted water. Boil over medium-high heat until the potatoes are tender, about 15-20 minutes. Drain and return to the pot.

    Prepare the Mashed Potatoes: Add the whole milk and 2 tablespoons of butter to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm while you prepare the sausages.

      Cook the Sausages: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sausages and cook until browned all over, about 10-12 minutes. Once cooked, transfer the sausages to a plate and keep warm.

        Sauté the Onions and Garlic: In the same skillet, add the sliced onions and cook for about 5 minutes until softened. Add the minced garlic and thyme, cooking for an additional 2 minutes until fragrant. Season with salt and pepper.

          Combine and Serve: Return the sausages to the skillet, mixing with the onions and garlic for a minute to heat through. Serve the sausages over the creamy mashed potatoes, drizzling with gravy, and topping with the sautéed onions.
