4 pork sausages (any flavor)

1 pound (450g) of russet potatoes, peeled and chopped

1/2 cup (120ml) whole milk

1/4 cup (60g) unsalted butter

1 tablespoon olive oil

1 onion, thinly sliced

2 cloves garlic, minced

1 cup (240ml) low-sodium chicken broth

1 tablespoon Dijon mustard

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

Prepare the Mash: In a large pot, bring salted water to a boil. Add the chopped potatoes and cook until tender, about 15-20 minutes.

    Cook the Sausages: While the potatoes are boiling, heat the olive oil in a large skillet over medium heat. Add the sausages and cook, turning occasionally, until browned and cooked through, about 15-20 minutes.

      Caramelize the Onions: In the same skillet (remove sausages momentarily), add the sliced onions. Cook low and slow, stirring occasionally until the onions are caramelized and golden, about 10-12 minutes. Add the minced garlic and cook for another minute.

        Make the Gravy: Pour in the chicken broth and stir in the Dijon mustard to the caramelized onions and garlic. Allow it to simmer for 5 minutes to enhance flavors. Season with salt and pepper.

          Mash the Potatoes: Drain the potatoes and return them to the pot. Add the butter and milk. Mash until smooth and creamy. Season with salt and pepper to taste.

            Combine and Serve: Place a generous scoop of mashed potatoes on each plate, top with the bangers, and ladle the onion gravy over the top. Garnish with fresh parsley.
