2 tablespoons olive oil

1 cup cremini mushrooms, sliced

2 cloves garlic, minced

1/2 cup heavy cream

1/4 cup beef broth (low sodium)

1 tablespoon Dijon mustard

1 teaspoon thyme leaves (fresh or dried)

1 tablespoon unsalted butter

Fresh parsley, chopped (for garnish)

Prepare the Beef: Season the beef tenderloins generously with salt and black pepper on both sides. Let them sit at room temperature for about 15 minutes for even cooking.
