Ingredients
  

1 cup mixed berries (strawberries, raspberries, blueberries)

1 tablespoon sugar

1 cup sparkling water

1/2 cup heavy cream

1 teaspoon vanilla extract

Crushed ice

Fresh mint leaves for garnish

Instructions
 

In a small saucepan over medium heat, combine the mixed berries and sugar. Cook for 5-7 minutes, stirring frequently, until the berries have broken down and released their juices, forming a syrup. Remove from heat and let cool.

    In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form. This will add a beautiful creamy element to your soda.

      Fill a glass halfway with crushed ice. Add 2-3 tablespoons of the berry syrup on top of the ice.

        Slowly pour sparkling water over the ice and syrup until the glass is almost full, leaving room for the cream. Stir gently to combine.

          Top the soda with a generous amount of whipped cream, allowing it to float on top.
