2 cups cooked chicken, shredded (rotisserie chicken works well)

1 cup shredded cheese (cheddar or Monterey Jack)

1 cup red enchilada sauce (homemade or store-bought)

1 can (4 oz) diced green chiles

1/2 cup sour cream

1/2 medium onion, finely chopped

1 teaspoon garlic powder

1 teaspoon cumin

8 small flour or corn tortillas

Fresh cilantro for garnish

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Filling: In a mixing bowl, combine the shredded chicken, half of the cheese, diced green chiles, sour cream, chopped onion, garlic powder, cumin, salt, and pepper. Mix until well combined.

      Assemble Enchiladas: Place about 1/4 cup of the chicken mixture in the center of each tortilla, then roll it up tightly and place seam-side down in a greased 9x13 inch baking dish. Repeat for all tortillas.

        Add Sauce: Once all enchiladas are in the dish, pour the red enchilada sauce evenly over the top.

          Add Cheese: Sprinkle the remaining shredded cheese on top of the enchiladas.

            Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and lightly golden.

              Garnish and Serve: Once out of the oven, let it cool for a few minutes before garnishing with fresh cilantro. Serve warm and enjoy!
