4 large butter croissants

4 large eggs

1 cup shredded cheddar cheese

1 ripe avocado, sliced

4 slices of crispy bacon or turkey bacon

1 small tomato, sliced

1 tablespoon fresh chives, chopped (optional)

Salt and pepper to taste

1 tablespoon olive oil or butter for cooking

Instructions
 

Preheat your oven to 350°F (175°C) to warm the croissants later.

    In a non-stick skillet, heat 1 tablespoon of olive oil or butter over medium heat.

      Crack the eggs into the skillet, season with salt and pepper, and fry to your desired doneness (sunny-side up, over-easy, etc.). Once done, sprinkle half of the cheddar cheese on top of each egg, allowing it to melt slightly from the heat.

        While the eggs are cooking, slice the butter croissants in half lengthwise, creating a top and bottom.

          Place the bottom halves of the croissants on a baking sheet and layer them with slices of bacon, followed by the cheesy fried eggs.
