4 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 cup shredded mozzarella cheese

¼ cup pepperoni slices

½ cup marinara sauce, for dipping

2 tablespoons grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon garlic powder

Fresh basil leaves for garnish (optional)

Prepare the Bread: Start by spreading a thin layer of softened butter on one side of each slice of sourdough bread. This will give your grilled cheese a beautiful golden crust.

    Layer the Ingredients: Place two slices of bread, buttered side down, on a clean work surface. On each slice, sprinkle half of the shredded mozzarella cheese evenly. Layer the pepperoni slices over the cheese, then add the remaining mozzarella on top. For an added flavor burst, sprinkle with Italian seasoning and garlic powder.

      Top with Remaining Bread: Place the other two slices of bread on top, buttered side up, to form two sandwiches.

        Heat the Skillet: Preheat a non-stick skillet over medium heat. Once hot, carefully place one sandwich in the skillet. Cook for about 4-5 minutes or until the bottom is golden brown and the cheese begins to melt.

          Flip & Cook: Using a spatula, carefully flip the sandwich to cook the other side for another 4-5 minutes until golden and crispy. Repeat with the second sandwich.

            Serve: Remove from skillet, and let cool for a minute. Cut each sandwich in half diagonally. Serve with marinara sauce on the side for dipping.
