1 cup graham cracker crumbs

1/4 cup unsalted butter, melted

2 cups cream cheese, softened

3/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup whipped cream (store-bought or homemade)

2 ripe bananas, mashed

1/2 teaspoon cinnamon

Mini vanilla wafers (for garnish)

Fresh banana slices (for garnish)

Instructions
 

Preheat the oven to 325°F (160°C). Line a muffin tin with cupcake liners.

    In a small bowl, combine the graham cracker crumbs and melted butter. Stir until the crumbs are evenly coated.

      Press about a tablespoon of the crumb mixture into the bottom of each liner to form a crust. Bake in the preheated oven for 5-7 minutes. Remove from the oven and allow to cool slightly.

        In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, vanilla extract, and cinnamon, mixing until fully combined.

          Gently fold in the mashed bananas and half of the whipped cream into the cream cheese mixture until well incorporated.

            Spoon the banana cheesecake batter into each muffin liner, filling them about 2/3 full.

              Bake for 15-18 minutes or until the edges are set, but the centers remain slightly jiggly. Turn off the oven and leave the cheesecakes inside for 10 minutes.

                Remove from the oven and allow to cool to room temperature, then refrigerate for at least 4 hours or overnight until fully set.

                  Before serving, top each mini cheesecake with the remaining whipped cream, a mini vanilla wafer, and a fresh banana slice.
