4 cups cooked jasmine rice (preferably day-old)

6 strips of thick-cut bacon, chopped

2 large eggs, beaten

1 cup frozen peas and carrots mix

3 green onions, sliced (white and green parts separated)

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 teaspoon sesame oil

Salt and pepper to taste

Optional: soy sauce for drizzling, sesame seeds for garnish

Instructions
 

Cook the bacon: In a large skillet or wok, cook the chopped bacon over medium heat until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving the drippings in the pan.

    Scramble the eggs: In the same skillet, add the beaten eggs and scramble until just set. Remove from the pan and set aside with the bacon.

      Sauté the vegetables: Add the frozen peas and carrots to the skillet and cook for about 2-3 minutes until heated through. Stir in the minced garlic and the white parts of the green onions, cooking for an additional minute until fragrant.

        Add the rice: Increase the heat to high and add the day-old jasmine rice, breaking up any clumps. Stir-fry for 5-7 minutes until the rice is heated through and starting to crisp on the bottom.

          Season the rice: Pour in the soy sauce, oyster sauce, and sesame oil. Toss everything together until the rice is evenly coated. Add salt and pepper to taste.

            Combine everything: Add the cooked bacon and scrambled eggs back into the skillet. Toss everything together until well mixed, allowing everything to heat through for another 2 minutes.

              Garnish and serve: Remove from heat and top with the sliced green parts of the green onions. If desired, drizzle with a little extra soy sauce and sprinkle sesame seeds over the top before serving.
