4 slices of sourdough bread

4 ounces brie cheese, sliced

1/2 cup fresh blackberries

2 tablespoons balsamic glaze

2 tablespoons unsalted butter, softened

1 tablespoon fresh thyme leaves (optional)

Salt and pepper to taste

Instructions
 

Start by heating a non-stick skillet over medium-low heat.

    Spread softened butter on one side of each slice of sourdough bread. This will be the outside of the grilled cheese for a golden finish.

      On the non-buttered side of two slices, layer the brie cheese evenly.

        Top the brie with blackberries, then drizzle with balsamic glaze. If desired, sprinkle a few fresh thyme leaves for an added aromatic touch. Season with a pinch of salt and pepper to taste.

          Place the remaining slices of bread on top, buttered side facing out, creating a sandwich.

            Carefully place the sandwiches in the preheated skillet and cook for about 4-5 minutes on each side or until golden brown and the brie is melted. Press down gently with a spatula for even toasting.

              Once cooked, remove from skillet and let rest for about 1 minute; this helps the cheese set slightly.

                Cut the grilled cheese in half and serve immediately, optionally drizzled with a little extra balsamic glaze for garnish.
