Blackened Salmon Stuffed with Spinach and Parmesan Cheese

4 salmon fillets (6 oz each)

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

1/2 cup cream cheese, softened

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon Cajun seasoning

Salt and pepper to taste

Lemon wedges for serving

Prepare the filling: In a skillet over medium heat, add the olive oil. Sauté the minced garlic until fragrant, about 1 minute.

    Add the spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.

      Mix the cheeses: In a mixing bowl, combine the sautéed spinach and garlic with cream cheese and grated Parmesan until thoroughly blended. Season with salt and pepper to taste.

        Prepare the salmon: Lay the salmon fillets skin-side down on a clean surface. Use a sharp knife to carefully make a pocket in the side of each fillet (without cutting all the way through).

          Stuff the salmon: Generously fill each salmon pocket with the spinach and cheese mixture. Press gently to pack it in.

            Season the salmon: Rub Cajun seasoning over the top and sides of each stuffed salmon fillet to coat well.

              Cook the salmon: Heat a non-stick skillet over medium-high heat. Carefully add the stuffed salmon fillets, skin-side down. Cook for about 4-5 minutes per side, depending on the thickness, until the salmon is blackened and cooked through.

                Serve: Transfer the cooked salmon to a plate and let it rest for a minute. Serve with lemon wedges on the side for an extra burst of flavor.
