Ingredients

1 lb baby carrots, peeled

2 tablespoons olive oil

1/4 cup maple syrup

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

A pinch of cayenne pepper (optional for heat)

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

In a large bowl, combine the olive oil, maple syrup, apple cider vinegar, smoked paprika, garlic powder, salt, black pepper, and cayenne pepper (if using). Mix well to create a glaze.

Add the baby carrots to the bowl and toss them in the glaze until they are evenly coated.

Spread the glazed carrots in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure even roasting.

Roast in the oven for 25-30 minutes, or until the carrots are tender and caramelized, stirring halfway through for even cooking.

Once roasted, remove the carrots from the oven and let them sit for a few minutes.

Transfer the glazed carrots to a serving dish and sprinkle with chopped fresh parsley for a vibrant finish.
