Bourbon Peach Roasted Shrimp

1 lb large shrimp, peeled and deveined

2 ripe peaches, pitted and sliced into wedges

3 tablespoons bourbon-flavored barbecue sauce (non-alcoholic)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon fresh thyme, chopped (or ½ tsp dried thyme)

Salt and black pepper to taste

Zest of 1 lime

Fresh lime wedges for serving

Instructions
 

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    In a large mixing bowl, combine the peeled shrimp and peach wedges.

      In a separate small bowl, whisk together the barbecue sauce, olive oil, minced garlic, smoked paprika, thyme, lime zest, salt, and pepper until well blended.
