Brie, Bacon & Blackberry Grilled Cheese

4 slices of sourdough bread

4 ounces Brie cheese, sliced

4 slices of crispy bacon

1/4 cup fresh blackberries

2 tablespoons balsamic glaze

2 tablespoons unsalted butter, softened

Salt and pepper to taste

Fresh thyme leaves for garnish (optional)

Instructions
 

Begin by cooking the bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel to drain excess fat.

    In the same skillet, toast the slices of sourdough bread until golden brown on one side. Remove the bread and set aside.

      Spread a thin layer of softened butter on the toasted side of each slice of bread.

        On the unbuttered side of one slice, layer the Brie cheese, crispy bacon, and a handful of fresh blackberries.

          Drizzle balsamic glaze evenly over the blackberries and season with a pinch of salt and pepper.

            Top with the other slice of bread, unbuttered side down, and press gently to compact the sandwich.

              Heat the skillet over medium-low heat and carefully place the sandwich in the pan. Cook for about 3-4 minutes per side, or until the bread is crispy and the cheese is melted, flipping carefully with a spatula.

                Once finished, remove the sandwich from the skillet and let it sit for a minute before slicing in half.

                  Optionally, garnish with fresh thyme leaves for an aromatic touch before serving.
